Vanilla Wafer Crusted Sweet Potato Pie |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Victor Estate in Allen, Texas in 1981. Ingredients:
4 large sweet potatoes |
2 cups granulated sugar |
1 stick unsalted butter |
1/4 teaspoon ground cinnamon |
1/4 teaspoon ground nutmeg |
1/2 cup milk |
20 vanilla wafers |
Directions:
1. Boil potatoes until tender then allow to cool and peel. 2. Put potatoes in a large mixing bowl and mix thoroughly with a potato masher. 3. Melt butter and mix with remaining ingredients except vanilla wafers. 4. Arrange vanilla wafers in bottom and up sides of pie plate. 5. Pour potato mixture over cookies then bake at 375 for 40 minutes. |
