Nice moist vanilla ring cake. Great topped with sauce or berries and cream or plain.
Ingredients:
1 c. shortening
2 c sugar
4 eggs
2 tbs vanilla extract
3 c all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 c buttermilk
drizzle
1 c confectioners sugar
1 to 2 tbs milk
1/2 tsp vanilla extract
Directions:
1. In large bowl,cream shortening and sugar until light and fluffy,about 5 mins. Add eggs,one at a time,beating well after each addition. Beat in vanilla. Combine flour,baking powder and baking soda;add to creamed mixture alternately with buttermilk,beating well after each addition.
2. Pour into greased and floured 10 tube pan. Bake at 350 for 55-65 mins or till toothpick comes out clean. Cool 10 mins before removing from pan to wire rack to cool completely.
3. Combine drizzle ingredients and drizzle over cake.
