A chunky pear sauce with vanilla bean. For vanilla lovers-VERY vanilly.
Ingredients:
15 lbs firm pears, sliced and cored or 28 cups cups sliced pears
4 cups water
4 tablespoons lemon juice
1 teaspoon lemon juice
1 whole vanilla bean, minced fine
1 cup white sugar
Directions:
1. cook pears and water and lemon juice over med high heat covered until tender enough to break apart with a wooden spoon.don't cook until mushy though.about 7 minute.
2. add vanilla and sugar and mix thoroughly.
3. process in pressure canner at 10 pounds for 10 minute.
4. yield 8 pints.
5. The pears cook more in the pressure canner and will break down more.
