Vanilla Lemon Sugar Cookies

This is a great basic recipe for sugar cookies. The original McCormick® recipe didn't use the lemon zest, but I added it and it gives them just a hit of flavor.
Ingredients:
1 cup butter, softened
1-1/2 cups granulated sugar
fresh lemon zest from 1/2 a lemon
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 teaspoon pure vanilla extract
2-1/3 cups all-purpose flour

Directions:
1. Preheat oven to 375°.
2. In a large bowl, beat butter with an electric mixer on medium speed until light and fluffy.
3. Add 1-1/2 cups sugar, lemon zest, cream of tartar, baking soda and salt.
4. Beat until well blended, scraping side of bowl occasionally.
5. Beat in eggs and vanilla.
6. Beat in as much flour as possible with the mixer.
7. Using a wooden spoon, stir in any flour that you can't beat in with the mixer.
8. Cover and refrigerate for 2 hours.
9. Shape dough into 1-inch balls.
10. Roll in granulated sugar.
11. Place the cookie balls about 2-inches apart onto ungreased baking sheet(s).
12. Bake 8 minutes or until lightly browned.
13. Remove from baking sheet(s) and place onto wire racks to cool completely.
14. This recipe makes about 5 dozen cookies.
