Vanilla Glazed Carrots

Sweet and crunchy carrots with just a hint of vanilla in the glaze. Recipe from a package of Earth Exotics baby carrots.
Ingredients:
2 cups baby carrots
1 1/2 tablespoons honey
1/4 teaspoon vanilla extract
1 tablespoon butter
1/4 teaspoon white wine vinegar
1 pinch salt
Directions:
1. Combine all ingredients in a large sauté pan.
2. The carrots should form a single layer in the pan.
3. Bring the carrots to a simmer on medium-high heat (you may need to add a bit more honey or some water to keep the carrots from burning while they cook).
4. Reduce the liquid until the pan is just about dry.
5. The carrots should be cooked through, shiny and delicious.
