A touch of Cardamom adds an unusual accent to what is essentially a vanilla cookie. Be sure to use only a large egg for this recipe, to achieve a proper dough consistency.
Ingredients:
1 cup unsalted butter, room temperature
1 cup granulated sugar
1 large egg
2 1/2 teaspoons vanilla extract
1/2 teaspoon ground cardamom
1/2 teaspoon salt
2 1/2 cups all-purpose flour, sifted before measuring
vanilla sugar (optional)
Directions:
1. Preheat oven to 375°F.
2. Combine butter and sugar in large bowl. Using electric mixer set on high speed, beat until light and fluffy. Beat in egg, vanilla extract, cardamom and salt. Using spoon, stir in flour until well mixed.
3. Pack dough into cookie press. Fit with design plate. Press dough out onto ungreased baking sheets spacing cookies 1-inch apart.
4. Bake until golden brown, about 10 minutes. Gently transfer cookies to wire racks. Sprinkle with vanilla sugar, if desired, and let cool. Store in an airtight container at room temperature for up to 4 days.
