Vanessa's Low Glycemic Load Strawberry Shortcake

This is a creation as we are trying to embrace a low glycemic index / low glycemic load in our house! We love this one!
Ingredients:
1/2 cup oat flour
1/4 cup flax seed (ground)
1/4 cup wheat germ (ground)
1/2 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon honey
1/4 cup butter
1/2 cup milk
1/2 quart ripe strawberry, washed, hulled and sliced
1/4 teaspoon vanilla extract
1/2 cup heavy whipping cream
1/8 teaspoon vanilla
1/8 cup sour cream
Directions:
1. Mix dry ingrediants with butter to form soft crumbs, stir in milk.
2. drop onto cookie sheet and bake for 15-20 minutes at 450 degrees.
3. Chill cream and whip until soft peaks are formed, stir in sour cream and vanilla flavoring.
4. Carefully cut shortbread in half once cooled, layer whipped cream and strawberries inside.
