So I was just sitting here trying to think of a special meal and dessert for my guys for Valentine's Day. I was searching and nothing was grabbing my attention. But then I inspired myself and came up with this. It's basically a black forest cake but jazzed up a bit with the cream cheese. Read more . I was going to go with a white cake but you HAVE to have chocolate for Valentine's Day.
Ingredients:
1 pkg. chocolate cake mix, 2 layer size
1 3 oz pkg. cherry jello
3/4 cup boiling water
1/2 cup cold water
1 can cherry pie filling
1 8 oz pkg. cream cheese, softened
1 cup icing sugar
1 large tub of cool whip
2/3 cup chocolate chips
2 tsp. oil
Directions:
1. Make the cake mix according to package directions and bake it in a 9x13 pan.
2. As soon as you get the cake in the oven, add the boiling water to the Jello stirring to dissolve. Stir in the cold water and set aside at room temperature.
3. Remove cake from oven and place on rack for 20 minutes.
4. Poke deep holes in top of cake about 1 apart using the end of a wooden spoon.
5. Slowly pour Jello evenly over cake.
6. Chill for about an hour.
7. Spread cherry pie filling over cake and put back in fridge to chill.
8. Beat cream cheese until soft and fluffy.
9. Slowly add icing sugar and beat well.
10. Fold in container of Cool Whip and spread over pie filling.
11. Put in fridge while you make drizzle.
12. Melt chocolate chips with oil on low heat stirring constantly.
13. Drizzle randomly over Cool Whip.
14. Refrigerate until ready to serve.
15. OR AN ALTERNATIVE.....
16. Cut the cake into cubes while it's still in the pan.
17. Layer some of the cubes in the bottom of a deep bowl.
18. Put a layer of pie filling over that followed by a layer of the cream cheese mixture.
19. Repeat layers and end with the Cream Cheese.
20. Drizzle chocolate over top.
21. Refrigerate.
