Upside-down Coconut-maple Corn Muffins

So Easy and Quick to make these wonderful Muffins. Double the batch if you need more. Such a winner!
Ingredients:
1 pkg. (8-1/2 oz.) corn muffin mix
1/2 cup maple-flavored or pancake syrup
1/2 cup flake coconut coconut
Directions:
1. PREPARE muffin mix as directed on package, placing 1 Tbsp. each syrup and coconut in each of 8 prepared medium muffin cups before pouring in batter.
2. BAKE muffins as directed on package; cool slightly.
3. SERVE coconut-sides up.
4. NOTE: A great substitute is a 1/4 cup finely chopped pecans for 1/4 cup of the coconut.
