This is a great recipe for an incredible tart. I pulled this from a Southern Living magazine several years ago and have made it a few times and it is always good. I usually make it at Easter or Thanksgiving. Enjoy
Ingredients:
1/4 cup golden raisins
1/4 cup irish whiskey
2 cups cake flour
1 tablespoon baking powder
1/4 cup granulated sugar
3/4 cup cold butter divided
1/2 cup buttermilk
1 cup superfine sugar
1 tablespoon ground cardamom
2 granny smith apples cored and sliced horizontally
Directions:
1. In small bowl combine raisins and whiskey then soak 30 minutes.
2. In large bowl sift together cake flour, baking powder and granulated sugar.
3. With pastry cutter cut or work 1/2 cup butter into flour until it is consistency of crumbs.
4. Drain raisins and reserve whiskey.
5. Add raisins to flour then stir in buttermilk and blend to make a dough.
6. Gather dough and press together until it forms a ball.
7. Turn dough out onto lightly floured surface then roll or pat to form 12” circle.
8. Combine superfine sugar, reserved whiskey, remaining butter and cardamom in large skillet.
9. Heat until butter melts and sugar caramelizes.
10. Add apple slices in batches and cook 3 minutes.
11. Remove apples with slotted spoon and continue to cook until caramel thickens.
12. Spread caramel on bottom of a quiche pan.
13. Starting in center arrange apple slices by overlapping them in 2 circles over the caramel.
14. Cover with circle of dough then preheat oven to 400.
15. Bake tart until crust is golden brown about 15 minutes then allow to cool 10 minutes.
16. Place serving plate on top and invert then slice and serve warm with sorbet.
