Unexpected Turnip Casserole

I am asked to make this dish every Thanksgiving and Christmas. I call it Unexpected because I find turnip to be a love it or hate it kind of veggie - and this dish turns some turnip haters into turnip likers. Read more . It is a light alternative to the regular turnip fare.
Ingredients:
1 large or 2 medium turnips, peeled and chopped into pieces
2 carrots, peeled and chopped into pieces (optional)
2 small macintosh apples, peeled and chopped into pieces
2 extra large or 3 large eggs, separated
1/2 tsp salt
1/2 tsp pepper
1 tsp nutmeg
2 tbsp brown sugar
add a bit more sugar and nutmeg if you find you end up with a huge heaping mound of mashed veggies
1/2 cup breadcrumbs
2 tbsp butter
Directions:
1. Preheat oven to 350 degrees
2. Peel turnip, cut up into pieces, and boil turnip until tender
3. Mash turnip (and carrots/apples if you are using)
4. Mix in egg yolks, nutmeg, salt, pepper, brown sugar
5. Beat egg whites in separate dish until soft peaks form
6. Mix in the egg whites - this is what makes the turnip lighter than your normal turnip dishes (as well as the carrots and/or apples if that's what you've chosen to add)
7. Smooth turnip mixture evenly over bottom of greased casserole dish
8. Melt butter and add breadcrumbs, and sprinkle mixture over top
9. Bake for 35 to 40 minutes
