Uncommon Ramen BBQ Chicken Pizza Bake

When time is tight and the budget is tighter, this quick and easy pizza bake is a family pleasing lifesaver. Made for the Dining On A Dollar Contest! Revised after the contest: After your wonderful feedback I have revised this recipe so the crust bakes better. Please make sure to drain the noodles very very well so that they are very dry when preparing the crust to ensure the middle cooks as well as the edges. This makes more of a pan type pizza bake you eat with a fork rather than a 'pizza'.
Ingredients:
6 ounces ramen noodles, any flavor
1/2 cup milk
1 egg, beaten
1/4 cup parmesan cheese, grated
1 cup barbecue sauce, use your favorite- we like sweet baby ray's
1 cup cooked chicken, chopped
1/2 red onion, sliced thinly (works great with any onion but a sweet onion is best)
11 ounces mandarin oranges, drained well
2 cups mozzarella cheese, grated
black olives (optional)
mushroom (optional)
canned jalapeno slices (optional)
bell pepper (optional)
red pepper flakes (optional)
Directions:
1. Remove ramen noodles from packages and cook in boiling water just until al dente. Discard flavor packets or save for another use.
2. Meanwhile, beat egg and whisk together with milk and parmesan cheese.
3. Drain noodles VERY well and mix into egg mixture. Line a sheet pan or pizza pan with aluminum foil and spray with cooking spray. (If using a pizza stone there is no need to do that step)
4. Spread noodle mixture onto pan making sure to spread it out evenly. Form the crust so the edges are thicker than the middle. Bake at 350° for 10 minutes.
5. Remove pan from oven and spread barbecue sauce over noodles. Scatter chicken, onions, and oranges over top. Sprinkle mozzarella cheese over all.
6. Bake again at 350° for another 10-15 minutes or until brown and bubbly. Let stand 5 minutes before slicing.
