Uncle Willie's Roast Turkey

Ingredients:

  • 12 -16 lbs turkey
  • 2 large sweet onions
  • 2 tsp salt
  • 2 tsp pepper
  • 1 tbsp paprika
  • 1 bunch sage
  • 1 bunch rosemary
  • 1/4 cup canola oil

Directions:

  1. Pre-heat oven to 350.
  2. Rub entire turkey with oil.
  3. Fine dice sage and rosemary.
  4. Mix salt, pepper, paprika, sage and rosemary.
  5. Cover entire turkey with spice mixture.
  6. Cut oranges in half and stuff in turkey.
  7. Cut onion in quartars an drop in roasting pan.
  8. Peel garlic and drop in roasting pan.
  9. Roast on a rack breast side down for 2 hours.
  10. Turn breast side up and finish to 170 degrees.
  11. Let rest 20 min and eat.
