This is an oldy but goodie often called McCalls, Supreme, Ultimate, LIndy's, or New York style Cheesecake and various recipes appear over the years , some either using a pastry cookie crust or graham cracker crumbs. Read more . I just made this for New Years with a strawberry topping plus some crushed candied walnuts to add my unique touch. It makes a tall impressive cheese cake. I bypass the crust part. Ingredients:
pastry crust ( optional for me )
1 c flour; sifted
1/4 c sugar
1 ts lemon peel; finely grated
1 ts orange peel; finely grated
1/2 c butter
egg yolk , 1
1/4 ts vanilla
filling
2-1/2 lb cream cheese ( 5, 8 oz. pkgs )
1-3/4 c sugar
3 tb flour
1-1/2 ts lemon peel; finely grated
1-1/2 ts orange peel; finely grated
1/4 ts vanilla
5 eggs
2 egg yolks
1/4 c cream
Directions:
1. Combine flour and sugar, peels in large bowl.
2. Cut in butter until texture of coarse crumbs.
3. Stir in yolk and vanilla to form a soft dough.
4. Chill at least 1 hour. .
5. Roll pastry on floured board to 1/8 in. thick
6. Cut out a 9 in circle; refrigerate the trimmings.
7. Place the circle of dough over the bottom of a greased 9 in springform pan.
8. Preheat oven to 400F
9. Bake until golden, about 20 minutes.
10. Let cool.
11. Filling: Beat cream cheese with the sugar, flour, lemon and orange
12. peel and vanilla with an electric mixer.
13. Add eggs and yolks, one at a time, beating thoroughly after each addition.
14. Stir in the cream.
15. Increase oven temp to 550F.
16. Grease sides of springform pan.
17. Roll out the reserved pastry trimmings and cut into strips 2 in. wide.
18. Pat into place against the sides of the pan, pressing an edge into the bottom crust.
19. Fill immediately with the cream cheese mix.
20. Bake 12 minutes.
21. Reduce temp to 200F; bake 1 hour. OR center set like a custard
22. Let cake cool completely on wire rack.
23. Refrigerate for at least 2 hours before serving.
24. Top as desired with various fruits and glazes
25. Note:
26. I chill overnight for the best texture
27. since I don't use a crust baking times may alter
28. Sometimes I also bake in a waterbath to prevent cracks.
29. Also the heat is 550F in the recipe to produce a browned top crust. and then lowered to finsih cooking
