I LOVE crab stuffed mushrooms, and this is my favorite recipe. It's a formed recipe from several over time. The shrimp is optional but adds a great touch, and the ranch or mayo with Chili Powder make a nice taste emerge. Read more . I don't measure the sausage generally, so just toss in for taste.
Ingredients:
1 cup cooked flaked crab
1 small can (4 oz) shrimp, drained
8 ounces cream cheese, softened
1 tbsp. mayonnaise or ranch salad dressing
1/4 cup herb bread crumbs or stuffing mix (chicken or herb flavoured)
1 teaspoon lemon juice
2 dashes worcestershire sauce
1/4 teaspoon basil
1/4 teaspoon garlic powder or 2 cloves minced garlic
2 green onions, minced
1 tsp. chili powder
24 large mushrooms
sprinkling of paprika
1/2 cup cheddar cheese, grated
2 tablespoons freshly grated parmesan cheese
portion size of sausage, cooked, drained, and crumbled
Directions:
1. Wash mushrooms, remove stems, and set caps aside. Chop about 1/2 of the mushroom stems. Combine all ingredients except for the cheese and fill caps. Place in a large baking sheet that has been lightly greased with butter. Top with the cheeses. Bake at 450 for 15-20 minutes. Serve warm. OK reheated but better fresh.
2. This recipe can also be chilled overnight before baking and serving.
