When you make pickled beets yourself, you control the spices. Here's an easy recipe from Vancouver Entertains .
Ingredients:
prep. time includes marinating time.
72 hours 15 minutes (72 hrs prep, 20 min cooking)
8 servings
2 (14 ounce) cans rosebud beets, drained but keeping 2/3 cup
liquid reserved
1 cup vinegar
1 cup white sugar
1/4 teaspoon salt
1/2 teaspoon whole allspice
4 cloves
1/3 stick cinnamon
Directions:
1. Mix beet liquid, vinegar, sugar, salt and spices in a saucepan
2. and bring to a boil.
3. Add beets and return to a boil, then remove from the heat.
4. Transfer beets to a jar and cover with liquid.
5. Marinate in refrigerator for 2 to 3 days, then serve.
