A melange of potatoes , carrots and fruit slow cooked, often to include meat such as sausage or brisket of beef. Popular served during the Jewish New year. Flavors especially blend if made and reheated the following day. Read more . Can be made entirely vegetarian also, without any meat
Ingredients:
2 very large sweet potatoes
4 medium white potatoes
4 large carrots
1 box pitted prunes
1 cup orange juice
1 cup brown sugar
1/2 stick butter or margarine cut up
1 lb ring kielbasa turkey sausage sliced
salt, pepper, cinnamon and honey to taste
Directions:
1. Peel vegetables and uniformly coarse chunk or cube them.
2. I like to use the crock-pot but one can use a large covered casserole for oven baking; If using a casserole or Dutch oven for baking add everything and bake 350 about one hour or until tender but not overly soft.
3. Correct seasoning and sweeten with some honey to taste.
4. If using a crock-pot, cook high 4 to 6 hours or longer at low.
5. However add the sliced turkey sausage the last 2 hours of crock-pot cooking since the sausage is already precooked.

7. Yield 12 servings.
8. Extras freeze well.
9. Notes Tastes even better when reheated.
10. Remember to spoon the liquids in bottom of casserole dish over the mixture gently.
11. Variations. omit meat for a vegetarian dish.
12. Try adding sweetened canned chunk pineapple if desired and use the liquid to replace some of the orange juice..
13. Or add a small piece of brisket if desired to replace the turkey sausage and cook the full time in the crock-pot until meat is fork tender.
