My Family loves Greek food. We are nowhere NEAR being greek, nor claim to be. however we can make some good greek food. Here is a side sauce served with Gyros, Pita bread, Dolmades etc... Enjoy!
Ingredients:
32 ounces plain yogurt
2 medium cucumbers, peeled, seeded and finely chopped
1 pinch kosher salt (table salt will do, but just a little)
8 garlic cloves, minced
3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
10 -12 fresh mint leaves, finely minced
fresh dill weed
cheese cloth or tea, towels
Directions:
1. Place yogurt in a strainer lined with Cheese cloth. Put Strainer in a bowl with enough room for liquid to drip down. Place in refrigerator for at least 4 hours (Over night works best) Empty bowl every few hours.
2. Place chopped cucumber in another cheese cloth and squeeze to remove liquid, discard liquid.
3. In mixing bowl combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar and mint. Mix well.
4. Store in the refrigerator in an airtight container for up to a week.
5. Serve with warm Pita bread.
6. ** May need more vinegar, garlic and oil, depending on taste.
