A little less fat, but just as much flavor. Use 2 small cukes.
Ingredients:
2 cucumbers, peeled and diced
1 1/4 cup no-fat yogurt
2 tbs olive oil
4 cloves garlic, minced
1 tsp dried dill
3 tsp lemon juice
Directions:
1. Combine yogurt, olive oil, dill, lemon juice, and garlic in a bowl. Cover and refrigerate one hour.
2. Dry cukes by patting with paper towels.
3. Whisk yogurt mixture until smooth. Add cucumbers to the yogurt mixture. Salt and pepper to taste.
