Two-Cheese Spinach Bake

I got this recipe from a holiday cookbook. I changed some of the ingredients to suit our personal tastes, but it's the only way I can get anyone in my family to eat spinach. It's so good!
Ingredients:
1 cup all-purpose flour
2 eggs, lightly beaten
1 cup milk
1/4 cup butter or 1/4 cup margarine, melted
1/2 small onion, chopped
2 tablespoons grated parmesan cheese
2 garlic cloves, minced
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup shredded monterey jack cheese
1/2 cup shredded cheddar cheese
Directions:
1. In a large bowl, whisk the flour, eggs, milk, butter, onion, parmesan cheese, garlic, salt and cayenne until combined.
2. Fold in spinach and both monterey jack and cheddar cheese.
3. Transfer to a greased 1-1/2-qt. baking dish.
4. Bake, uncovered, at 350 degrees for 40 minutes, or until a knife inserted near the center comes out clean. Serve immediately.
