Two Bean Caserole

If you like a little spice, and you love easy fast and healthy, this is it. Black beans and fat free refried beans with as many different peppers as you want to add - bake and serve! Its that simple. Great for a meal if you're a vegetarian like me, or serve it as a side. You can choose how spicey you like it and be creative! Make it yours!
Ingredients:
1 (16 ounce) can fat-free refried beans
1 cup pace picante sauce, medium
1 (4 ounce) can roasted green chilies
1 (16 ounce) can black beans
1 (16 ounce) can corn
1/2 cup red sweet pepper
1/2 cup orange sweet bell pepper
1 cup green bell pepper
1 small diced onion
2 tablespoons dried chipotle powder
8 roasted green chilies
8 ounces cheese
1/2 cup cilantro
Directions:
1. In a mixing bowl combine fat free refried beans, picante sauce and 4 oz can of green chilies.
2. Dice Sweet Red Peppers.
3. Dice Sweet Orange Pepper (can use Yellow Pepper if preferred).
4. Dice Green Bell Pepper.
5. In a mixing bowl combine black beans, corn and bell peppers, sweet red and yellow or orange peppers, onion and chipotle powder.
6. Spread fat free refried bean mixture in bottom of caserole dish.
7. Seed and peel whole green chilies
8. Layer whole green chilies on top of the refried bean mixture.
9. Layer 4 oz of cheese. (Mexican cheese works best).
10. Layer black bean mix on top of cheese.
11. Bake for 1.5 hours, uncovered at 350 degrees.
12. Add the remainder of the cheese
13. Bake for 20 minutes (until cheese is golden brown).
