My version of a potato skin. Perfect comfort food and great for a late night snack. Definitely not healthy, but I'm sure substitutions can be made such as margarine, low fat cheese, low fat or fat free sour cream and omitting the bacon.
Ingredients:
6 small potatoes, baked
2 slices bacon, cooked & crumbled
1/2 teaspoon parsley
1/2 teaspoon french fry seasoning
1/2 teaspoon garlic salt
1/2 teaspoon steak seasoning
1 tablespoon margarine
2 tablespoons milk
1/4 cup shredded monterey jack and cheddar cheese blend
1 tablespoon bacon bits
1/4 cup shredded monterey jack and cheddar cheese blend
Directions:
1. hHalve potatoes & scoop out most of the insides into a bowl.
2. Add seasonings to potato mixture.
3. Add margarine, milk and 1/4 cup shredded cheese, mix well.
4. Scoop back out evenly into potato skins.
5. Top with sprinkled bacon bits and shredded cheese.
6. Place potato skins on greased cookie sheet.
7. Broil in the oven until crispy & brown, approximately 7 minutes for me.
