Twice Baked Sweet Potatoes

Ingredients:

  • 2 large sweet potatoes (1 1/2 lb)
  • 2 oz (1/4 8 oz package) neufchatel cheese, cubed
  • 2 tbsp fat-free or 1% milk
  • 1 tbsp brown sugar
  • 1/4 cup pecan pieces

Directions:

  1. 425F oven
  2. Cut potatoes lengthwise in half; place, cut sides down, in a foil lined baking pan
  3. Bake 30 to 35 minutes or until tender
  4. Scoop out centers of potatoes into a bowl, leaving 1/4 inch thick shells
  5. Add cheese, milk, brown sugar and cinnamon to the potatoes; mash until blended
  6. Spoon mixture into shells; top with nuts
  7. Bake 8 minutes or until potatoes are heated through and nuts are toasted
