Twice Baked Potatoes

These baked potatoes are baked once mashed up with some fixings and then baked again. These can be served along the side of Parmesan Seared Chicken.
Ingredients:
4 baking potatoes
shredded cheddar cheese
bacon 4 pieces chopped fine
salt
pepper
sour cream
chives (optional)
Directions:
1. Bake potatoes for one hour
2. When potatoes are cool enough to handle
3. Cut potato lengthwise
4. Scoop out potato leaving 1/4 inch shell
5. Mash Potato filling in bowl
6. Add bacon
7. Add 1/2 cup shredded cheese
8. Add 1 cup sour cream
9. Add salt and pepper to taste
10. Blend well
11. Scoop filling back into empty potato shells
12. Place on cookie sheet
13. Add shredded cheddar on top of filling
14. Bake for 20 more minutes
15. Add chives before serving (optional)
