Twice Baked Faux-Tatoes

For those avoiding potatoes, this cauliflower-based recipe is heavy on the veggies and delicious! I make mine with Country Crock, Bac-O's, fresh chives and cheddar cheese. Salt and pepper to taste.
Ingredients:
1 head cauliflower, large
1/4 cup sour cream
1/4 cup margarine
2 ounces cheese, shredded
2 cups frozen peas
1/4 cup soy bacon bits
1 tablespoon chives, chopped
Directions:
1. Remove outer leaves from cauliflower and dice.
2. Microwave cauliflower on high for 10 minutes or until soft.
3. Place cauliflower, sour cream, and margarine in blender and pulse until smooth.
4. In oven-safe casserole dish, mix peas, bacon bits, chives, and cauliflower mixture.
5. Top with shredded cheese and bake at 400 degrees for 20 minutes or until cheese is bubbly.
