Twice As Healthy, Twice As Tasty Zucchini Bread

I'm always looking for ways to healthify recipes. I try to decrease the amount of fat and sugar and increase the amount of fiber. Sometimes it changes the texture or flavor so much my husband won't eat it, but when I can modify the recipe and my husband doesn't even notice then I know the recipe is a keeper! This is one of my husband's favorite recipes...
Ingredients:
1 1/2 cups sugar
1 cup splenda sugar substitute
1 1/2 cups whole wheat flour
1 1/2 cups all-purpose flour
1/2 cup canola oil
1/2 cup applesauce, unsweetened
2 cups zucchini, grated
3 eggs
3 tablespoons vanilla
3 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
Directions:
1. Preheat oven to 350 degrees.
2. Combine all ingredients in a large bowl and mix well.
3. Pour into two greased loaf pans.
4. Bake for 1 hour.
