Tuscany Style Potato And Kale Soup

This is a hearty warming soup that makes you feel healthy because your eating your greens. It might remind you of your favorite soup from your favorite Italian restaurant. You know the one.
Ingredients:
1 lb. italian sausage, mild or spicy
1 medium onion, chopped
3 large potatoes, peeled and diced
48 oz. chicken stock
1 small can evaporated milk
1 bunch of kale, wash well, tear and chop leaves from stems, throw away stems
salt and pepper to taste
Directions:
1. Brown sausage and add onion, cook until soft, maybe 5 min. drain if you feel you must
2. Add potatoes and stock bring to a boil.
3. Add kale (don't worry, it's not too much), cover and allow to simmer, not boil, for about 25 minutes, covered. Stir occasionally.
4. Check to see if potatoes are soft, add milk and simmer for a few minutes more.
5. Salt and Pepper to taste
