Tuscan Style Chicken

A nice quick tasty stew. Ready in 20 minutes. Goes great with a crisp salad, some crusty bread, and herb butter!
Ingredients:
1 medium onion, chopped
4 cloves garlic, minced
2 tablespoons olive oil
1 lb boneless skinless chicken breast
1 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (19 ounce) can cannellini beans, rinsed and drained
1/2 cup fat-free low-sodium chicken broth
6 sun-dried tomatoes packed in oil, drained,rinsed under water,patted dry,and chopped
2 tablespoons chopped fresh rosemary
Directions:
1. Cook onion, and garlic in oil in a large skillet over medium-high heat until onion is tender, about 3 minutes.
2. Meanwhile, cut chicken into 1 1/2 inch pieces.
3. Sprinkle chicken with coriander, salt, and pepper.
4. Add chicken to skillet and cook, stirring, for 1 minute.
5. Stir in beans, broth, tomatoes, and rosemary; cover and simmer until chicken is cooked throgh, about 9-10 minutes more.
6. Ladle into serving bowls, and serve.
