Cooking Light - quick and easy vegetarian dish
Ingredients:
2 tsp extra virgin olive oil
1 cup zucchini, chopped
1/2 cup onion, sliced thin
1/2 cup red bell pepper, diced
1 tsp dried oregano
2 cloves garlic, minced
1 cup tomato, peeled and diced
15 oz. cannellini beans, rinsed
2 tsp (2 sprigs) rosemary
1 cup spinach, chopped
1/2 cup skim mozzarella cheese , shredded
1 fresh ground black pepper
Directions:
1. Heat oil until smoking. Add zucchini and next 4 ingredients, through garlic, and saute 2 minutes. Stir in tomato, beans, and rosemary; cook 2 minutes. Stir in spinach and remaining ingredients; cook until spinach wilts and cheese begins to melt. Discard rosemary.
