Ingredients:
1 tsp salt
1 tsp dry mustard
1 tsp dried thyme
1/2 tsp ground black pepper
24 ounce salmon fillets
2 tsp honey
3 tsp extra virgin olive oil, divided
8 cups baby spinach leaves
1/2 tsp garlic, minced
2 cups red seedless grapes, halved
1/2 cup red wine
Directions:
1. Preheat oven to 300 degrees.
2. Combine salt, mustard, thyme and pepper; mix well. Rub salmon fillets with the honey and sprinkle with 1/2 of the seasoning mixture.
3. Heat 2 tsp olive oil in a non-stick skillet. Brown both sides of salmon fillets and remove from pan.
4. Toss spinach and garlic with 1 tsp olive oil in a 13x9x2 inch baking dish. Place salmon over spinach, cover loosely with foil, and bake at 300 degrees for 10 minutes.
5. While salmon in baking, saute grapes in the same skillet used to brown the salmon. Add wine and bring to a boil, season with remaining seasoning mixture to taste, and reduce in half. Serve salmon on spinach topped with grape sauce.
