An easy to make Mediterranean-Style salad.
Ingredients:
1/3 cup extra virgin olive oil
1/4 cup red wine vinegar
1 garlic clove, minced
1 teaspoon dried italian seasoning
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
6 ounces romaine lettuce or 6 ounces mixed salad greens, torn into bite-sized pieces
1 cup cucumber, sliced
1/2 cup feta cheese, crumbled
1/2 cup kalamata olive, pitted
1/2 cup roasted red pepper, sliced
1 cup red onion, thin sliced
Directions:
1. In a large bowl, combine lettuce, cucumber, olives, red peppers, and onion. Toss together.
2. In a medium bowl, whisk together the olive oil, vinegar, garlic, italian seasonings, salt and pepper. Pour dressing over lettuce mixture and toss to combine.
3. Sprinkle with feta cheese and serve.
