Tuscan Pasta Sauce

This recipe by Trish Magwood is so good and so easy to make, a perfect recipe for during the week when you don't have a lot of time but want something a little more special for dinner.
Ingredients:
3 tablespoons vegetable oil
1 red onion, diced
1 shallot, minced
2 garlic cloves, minced
1 cup white wine
1 (28 ounce) can diced tomatoes, drained
1 1/2 cups whipping cream
1/3 cup kalamata olive, coarsely chopped
1/4 cup capers
kosher salt
black pepper
Directions:
1. In a skillet, heat the oil over medium heat.
2. Cook the onion and shallot until soft and translucent, about 7 minutes.
3. Add the garlic and continue cooking for 1 additional minute.
4. Add the wine and simmer until reduced by half, about 4 minutes.
5. Add the tomatoes and simmer for 20 minutes.
6. Add the cream, olives and capers and simmer for about 7 minutes.
7. Adjust seasoning to taste.
8. Serve over your favourite pasta!
