Tuscan Parmesan Pillows

Mashed potatoes and green peas go well with this lovely dish, or serve with lemon rice. I got this out of a Woman's Day magazine.
Ingredients:
1 1/2 lbs ground beef round
3 garlic cloves, crushed
1/2 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
1 cup grated parmesan cheese
1/3 cup chopped parsley
1 tablespoon olive oil
1 tablespoon butter
1/3 cup chopped parsley
lemon wedge
Directions:
1. Mix meat-mixture ingredients until well blended.
2. Shape into twelve 1 1/4-inch thick patties.
3. Let stand 15 minutes.
4. Heat oil and butter in a large heavy nonstick skillet over medium-high heat.
5. Add patties and cook until well browned on both sides and no longer pink in centers, about 5 minutes each side.
6. Sprinkle with remaining parsley.
7. Serve with lemon wedges to squeeze over the patties.
8. Serves 6.
