Okay, one more holiday gift for my foodie buddies. Be sure to butter the bottom and sides of the foil, as it can be a bear to peel off otherwise!
Ingredients:
1 tablespoon plus 1 cup butter (no substitutions), softened, divided
1-1/2 cups coarsely chopped pecans, toasted
1 to 1-1/2 cups chocolate chips (or part chocolate, part white)
2 cups packed brown sugar
1 cup light corn syrup
1/4 cup water
1 can (14 oz) sweetened condensed milk
2 teaspoons vanilla extract
Directions:
1. Line a 13 x 9 x 2 inch baking pan with foil. Butter the foil with one tablespoon of butter. Sprinkle with pecans and chips, set aside.
2. In a heavy saucepan, over medium heat, melt remaining 1 cup butter. Add brown sugar, corn syrup and water.
3. Cook and stir until mixture comes to a boil. Stir in milk.
4. Cook, stirring constantly, until a candy thermometer reads 248 (firm ball stage).
5. Remove from heat and mix in vanilla.
6. Pour into prepared pan, do not scrape saucepan.
7. Cool completely.
8. Turn out onto a cutting board and peel off the foil. Cut into approximately 1 inch squares. Yields about 2-1/2 pounds. Store in a tightly sealed container in the refrigerator.
