This is an incredible cake that is bursting with great chocolate and caramel flavors. This is my cousin's recipe and one she makes often for her family. Enjoy
Ingredients:
2 cups cake flour
1-3/4 cups granulated sugar
1/2 cup cocoa
1 teaspoon salt
1 tablespoon baking soda
1 egg
2/3 cup vegetable oil
1 cup buttermilk
1 cup hot coffee
frosting
6 tablespoons butter
1/2 cup milk
1 cup granulated sugar
2 cups semisweet chocolate chips
3/4 cup caramel
1-1/2 cups toasted pecans
Directions:
1. Combine egg, oil and buttermilk.
2. Combine dry ingredients then add wet to dry until well mixed.
3. Slowly pour in hot coffee then scrape bowl and pour into 3 greased and pepper cake pans.
4. Bake at 350 for 30 minutes then cool cake completely.
5. Mix sugar and milk in saucepan then add butter and bring to a boil.
6. Remove from heat and add chocolate chips to pan then whisk until smooth.
7. If frosting is too thick or grainy add one or two teaspoons hot coffee.
8. Spread 1/3 of the frosting then sprinkle 1/2 cup pecans and drizzle 1/4 cup caramel on first layer.
9. Repeat for each layer.
