Ingredients:

  • 1 small onion, sliced
  • 3 tbsp butter
  • 1 1/2 tbsp flour
  • 1 cup milk
  • parsley (optional)
  • bacon , crumpled (optional)
  • crouton (optional)

Directions:

  1. Place turnips, potatoes, and onions in saucepan.
  2. Cover with small amount of water and simmer until tender; drain.
  3. Mash with potato masher.
  4. Add butter.
  5. Mix flour with 1/4 cup milk.
  6. Add to mixture and blend well.
  7. Add chicken stock.
  8. Mix thoroughly.
  9. Return to heat and bring to a boil.
  10. Remove from heat and add remaining 3/4 cup milk.
  11. Reheat to serving temperature taking care not to boil.
  12. Garnish with your choice of parsley, bacon or croutons.
