Turkish Beef-Herb Soup With Sour Plums

Tart plums perk up this herb-rich Turkish Georgian-style stew. From Joyce Goldstein's Sephardic Flavors .
Ingredients:
3 tablespoons olive oil
2 yellow onions, chopped
3 -4 tart plums, cored and chopped (greengage variety is good)
1 bunch fresh dill, minced
3 tablespoons fresh mint, chopped (soak in a few spoonfuls of water) or 1 tablespoon dried mint (soak in a few spoonfuls of water)
1/2 cup fresh parsley, chopped
1/4 cup rice
4 -6 tablespoons lemon juice
1 teaspoon sugar
2 teaspoons tomato paste
1 lb stewing beef or 1 lb beef brisket, cooked and chopped
meat stock or water, to cover
salt and pepper
Directions:
1. Warm the oil in a saucepan on medium heat. Add the onions and saute until tender.
2. Add the chopped plums, half the dill, the mint, half the parsley, rice, lemon juice, sugar, tomato paste, and beef. Stir well and add meat stock or water to cover. Bring to a boil. Reduce heat to low, cover and simmer until the rice is fully cooked, around 20-30 minutes.
3. Season with salt and pepper, and sprinkle with the remaining dill and parsley.
