Turkish Beef Casserole

You can prepare it in advance and heat before serving!
Ingredients:
1 kg lean beef, cut in 2 cm cubes
1 large yellow onion, chopped
1 medium green bell pepper
3 medium ripe tomatoes
3 tablespoons extra virgin olive oil
salt
1 cup beef stock
1 teaspoon ground thyme
Directions:
1. Heat oil in a saucepan, add onion and saute until soft.
2. Remove seeds and rib of pepper, chop, add to saucepan and cook for 5 minutes.
3. Add beef cubes and cook for about 5 minutes, stirring occasionally.
4. Cut tomatoes into small pieces, add to suacepan and cook for about 5 minutes.
5. Add stock and thyme.
6. Season with salt and simmer for about half an hour.
7. Serve with cooked rice.
