Ingredients:
1 1/4 cups diced peeled papaya
1/2 cup diced red onion
1/2 cup halved cherry tomatoes
2 tablespoons chopped fresh cilantro
1 teaspoon grated lime rind
1 1/2 tablespoons fresh lime juice
1 teaspoon grated peeled fresh ginger
1/4 cup raspberry or white wine vinegar
2 tablespoons fresh lime juice
1 1/2 tablespoons dijon mustard
1 tablespoon chopped fresh or 1 teaspoon dried rosemary
1 tablespoon minced fresh or 1 teaspoon dried thyme
2 teaspoons olive oil
2 (1/2-pound) turkey tenderloins
cooking spray
Directions:
1. Combine first 7 ingredients in a bowl; toss well. Cover and chill.
2. Combine vinegar and next 6 ingredients (vinegar through turkey) in a large zip-top plastic bag; seal, and marinate in refrigerator 30 minutes. Remove turkey from bag, reserving the marinade. Place turkey on a broiler pan coated with cooking spray; broil 10 minutes on each side or until turkey is done, basting frequently with marinade. Cut tenderloins into thin slices, and serve with papaya salsa.
