Turkey Salad

Ingredients:
1 1/4 pounds smoked turkey breast, diced
kosher salt and freshly ground pepper
1 cup chopped scallions
3/4 cup chopped celery
1/3 cup mayonnaise
2 tablespoons dijon mustard
1 cup seedless red grapes, cut in half
8 ounces provolone cheese, cut into 1/2 inch cubes
1/2 cup sliced almonds, toasted and coarsely chopped (optional)
3 tablespoons chopped fresh parsley
2 tablespoons snipped fresh chives
soft whole-grain sandwich bread, for serving
Directions:
1. Place the turkey in a medium mixing bowl and season with salt and pepper. Add the remaining ingredients (except the bread) and combine. Serve on sandwich bread.
