Turkey Rotini Split Pea Salad

This is an incredible way to eat turkey and pasta. Greatness in a bowl. I love everything about this recipe and hope you do as well. Enjoy
Ingredients:
2 cups rotini uncooked
1 cup split peas rinsed
2 teaspoons canola oil
1 large garlic clove minced
1/4 teaspoon salt
7 ounces fresh turkey breast
1/4 cup bell pepper diced
1/2 cup carrot grated
2 tablespoons sliced black olives
2 tablespoons green onion sliced
2 tablespoons grated parmesan cheese
1/4 cup fresh parsley snipped
dressing
8 ounces plain yogurt
1 tablespoon sour cream
1/2 teaspoon garlic minced
3 tablespoons olive oil
2 tablespoons tarragon white wine vinegar
3/4 teaspoon dry mustard
1 teaspoon crushed basil
1 teaspoon oregano
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
Directions:
1. Cook rotini according to package directions then drain and cool.
2. Add split peas to 3 cups boiling water then reduce heat and simmer 30 minutes.
3. Drain well then cool and set aside.
4. Heat oil then add brown garlic and add salt.
5. Add turkey and brown quickly on all sides.
6. Lower heat then cover and cook a few minutes or until all traces of pink are gone.
7. Add drained split peas and mix well coating with oil and pan juices then remove from heat.
8. Slice turkey then combine turkey, peas and rotini with remaining salad ingredients.
9. To make dressing combine all ingredients and mix well then toss with salad.
10. Chill several hours before serving.
