From Cooking Light Sept 2008. I love that there are so few ingredients and can be used as an appetizer or in pasta!
Ingredients:
1 lb ground turkey breast
1/2 cup part-skim ricotta cheese
1 egg
1/2 cup dry breadcrumbs
1/4 cup fresh basil, chopped
1/4 teaspoon pepper
1/4 teaspoon salt
Directions:
1. Preheat oven to 375.
2. Combine all ingredients and shape into about 18 meatballs.
3. Heat a large non-stick skillet over med-hi heat and coat pan with cooking spray. Add meatballs & brown on all sides.
4. Transfer meatballs to baking sheet coated with cooking spray and bake for 15 minute.
5. *To freeze: Follow directions then allow meatballs to cool to room temperature Place on baking sheet and place in freezer for about one hour. Transfer hardened meatballs to an airtight container and store in the freezer. To serve-thaw in refrigerator, then bake at 375 for approx 20 minute.
