3 cups potatoes, shredded and peeled |
1 1/2 cups finely chopped cooked turkey |
1/4 cup sliced green onion (optional) |
2 tablespoons all-purpose flour |
1 1/2 teaspoons salt |
vegetable oil |
Directions:
1. Beat eggs. 2. Stir in potatoes, turkey, onions, flour and salt. 3. Mix well. 4. Heat about 1/4 inch of oil in a large skillet. 5. Measure mixture by 1/3 cupfuls and put in hot oil. 6. Flatten a bit (carefully!). 7. Fry approximately 5 minutes on each side until potatoes are tender and cakes are golden brown on both sides. |
