Turkey or Chicken and Rice Curry

Cooked chicken or turkey...great for leftovers! Cooked rice. Curry powder. Fresh ingredients: celery, mushrooms, onion, bananna, raisins, coconut, peanuts, avocado, tomato. This was a special dish my mother made in the 1970's through the 1980's. She spent several years in the late 1950's as a missionary in Africa...this was a recipe from there or one of her missionary friends.
Ingredients:
2 tablespoons butter or 2 tablespoons margarine
1 cup celery (chopped)
2 teaspoons grated onions
2 cups chopped cooked turkey or 2 cups chicken
1 teaspoon curry powder
1/4 cup mayonnaise
3 ounces sliced mushrooms (i use 1/2 jar including 1/2 of the liquid)
1 tablespoon lemon juice
1/4 teaspoon salt
1 1/2 cups cooked rice
chopped banana
peanuts
chopped avocado
chopped tomato
raisins
shredded coconut (we like the sweetened kind)
chopped hard-boiled egg
chutney
Directions:
1. Melt butter in skillet. Sauté celery and onion until almost tender. Stir in chopped turkey, curry powder, mayonnaise, mushrooms, lemon juice and salt and rice. Heat on medium heat while stirring until heated through.
2. 4 Servings.
3. Have condiments on the table in bowls. We top this with peanuts, coconut, raisins, chopped avocado (we use this on everything possible!), chopped grape tomatoes, chopped banana (!), chutney and chopped boiled eggs have also been used.
4. Each person adds condiments of their choice to their own portion.
