Directions:

  1. Bring a large pot of water to boil for the noodles. Salt the water and cook noodles until al dente. Drain and return to pot.
  2. In a large deep skillet over medium-high heat add oil and bacon. Cook 2 to 3 minutes, until fat is rendered and bacon browns on edges.
  3. Add the turkey, crumbling with a spatula. Move the meat to one side and add mushrooms and onions to other. Cook for 3 to 5 minutes, then stir all together. Season with salt and pepper and sprinkle with thyme. Cook another 5 minutes.
  4. Add the wine. Stir mixture well. Stir in stock and bring to a simmer, then stir in cream and reduce heat to low. Add nutmeg and stir.
  5. Preheat broiler to high. Combine the noodles and turkey mixture. Grease a casserole dish. Transfer turkey noodle mixture to dish and top with cheese, then bread crumbs. Place dish 8 to 10 inches from broiler and brown 2-3 minutes. Garnish with parsley.
