Turkey Necks With Rice

I guess you can call this comfort food. It's very easy to make and taste great! Try it with hot sauce on the side.
Ingredients:
10 -15 turkey neck
salt and pepper
water
1 large onion, sliced
1 large green bell pepper, chopped
2 cups rice
4 cups stock
Directions:
1. In a large pot cover turkey necks with water. Add salt and pepper to taste,. Add onion and simmer about an hour and a half.
2. Remove turkey and reserve 4 cups of the stock. If you do not have enough stock, add water or chicken stock.
3. Put rice in a large casserole dish cover with the stock and add the green pepper; give a stir and then lay turkey necks on top.
4. Bake at 375 degrees for one hour.
