This is a traditional Italian Style Meatball, but I use Ground Turkey (White meat) instead of Beef. I've been trying to cut back on red meat in our diet, and this is just as good, if not better than my traditional meatballs! I usually serve them with my homemade pasta sauce with spaghetti. Since I use all white meat, there's not much fat in them, so I add a little more spices for extra flavoring. Delicious! If you don't have Pecorino Romano cheese, any Parmesan type of cheese will do.
Ingredients:
1 lb ground turkey, white meat only
3/4 cup breadcrumbs (panko bread crumbs are best)
3 tablespoons milk
2 eggs
1/2 cup pecorino romano cheese, finely shredded
1 tablespoon basil
1 tablespoon italian seasoning
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon pepper
olive oil
Directions:
1. Add bread crumbs, Milk and Eggs to mixing bowl and mix well.
2. Add Cheese, basil, Italian Seasoning, Onion powder, Salt & Pepper and mix well.
3. Add Turkey meat and stir until all ingredients are blended together.
4. Make meatballs, about 2 in diameter. (The meatballs will be wet , but don't add extra breadcrumbs or anything else, they will fry up perfectly.).
5. Coat the bottom of large frying pan with olive oil and heat over medium heat.
6. Add meatballs to oil and cover with lid. Fry about 5 minutes. Meatballs will most likely stick to the bottom of the pan slightly, but use a spatula to turn them over gently. They are ready to turn over when they are golden brown.
7. Once you have turned over the meatballs, cover again with lid and fry for another 5 minutes.
8. Remove lid and check bottom of the meatball, once they are golden brown all over, add them to your favorite pasta sauce and simmer for about 20-30 minutes.
9. Enjoy!
