Turkey Kebabs With Asian Peanut Sauce

This a great summer recipe. The peanut sauce has a great flavor with an asian flair. The turkey can be subsituted for beef or chicken.
Ingredients:
1 1/2 lbs turkey cutlets
1 whole green pepper, cut into pieces
1 whole red pepper, cut into pieces
1 zucchini, cut into pieces
1 onion, cut into pieces
2 tablespoons minced garlic
1 tablespoon ground ginger
2 tablespoons chopped chives
2 tablespoons soy sauce
2 tablespoons dijon mustard
1 tablespoon olive oil
1/2 teaspoon hot sauce
1/3 cup beef broth
1/2 cup soy sauce
2 tablespoons sesame oil
2 tablespoons garlic, minced
2 tablespoons ground ginger
2 tablespoons sugar or 2 tablespoons splenda sugar substitute
2 tablespoons red wine vinegar
1 teaspoon hot sauce
Directions:
1. Cut up turkey cutlets into large pieces (big enough to fit onto skewers) and place in a medium size glass dish.
2. Puree garlic, ginger, lime juice, soy sauce, Dijon mustard, oil, chives and 1/2 tsp hot sauce until well blended.
3. Pour marinade over turkey and coat thoroughly. Cover and marinate 1-2 hours in the refrigerator, tossing occasionally.
4. Thread turkey pieces and cut up vegetables alternately onto skewers. Discard remaining marinade.
5. Grill until turkey is cooked.
6. In food processor, blend all peanut sauce ingredients until smooth and blended. Store in airtight container at room temperature until ready to serve.
7. Pour some sauce over the turkey skewers and serve in a side dish for dipping.
