Ingredients:

Directions:

  1. Heat oven to 375 degrees. ightly coat a rectangle baking dish with cooking spray.
  2. For filling, stir together turkey, half the tomatoes (with juice), beans, 1/2 cup salsa, 1/2 cup cheese, sour cream, scallions, cilantro, cumin, salt and pepper. Spoon 2/3 cup filling into each tortilla. Roll and place seam down in the dish.
  3. For sauce, str remaining tomatoes (with juice), salsa and hot sauce. Spoon over enchiladas. Cover with foil and bake 30 minutes. Uncover and top with remaining cheese. Bake 5-10 minutes longer. Sprinkle with additional scallions and cilantro.
