Lower fat version of enchiladas without the fuss making
Ingredients:
2 lbs ground turkey
1 onion (diced)
8 oz black olives(chopped)
1 taco seasoning
28 oz of enchilada sauce(red)
10 corn tortillas
4 oz cheese(grated)
Directions:
1. Brown turkey in lg skillet, add onion, olives, and taco seasoning. Cook until turkey is done and onions are transparent. In sauce pan add a small amount of enchilada sauce and 1/4 cup of water, heat to slow boil, reduce heat cook tortillas one at a time and place in a cassarole dish that has been sprayed with nonstick spray.Make a crust with 6 of the tortillas. Pour meat mixture into crust then top with half of the enchilada sauce and half the cheese. Now repeat the same procedure with the other 4 tortillas and place them on the top of the cassarole. Top with remaining cheese and sauce. Bake 400 degrees for 25 minutes or until cheese is browning and bubbly. Remove from oven and let stand for 10 minutes to settle. Enjoy
